This study aims to examine the functional morphology of the proventriculus of the broad breasted white turkey (BBWT) (Meleagris gallopavo, Linnaeus 1758) using gross anatomy, light microscopy, gross/histomorphometric analysis, and scanning and transmission electron microscopy. The proventriculus was characterized internally by many elevated papillae with a mound, leafy flower, and lotus flower-shapes. Each papilla was enclosed by concentrically organized mucosal folds with distinct or indistinct proventricular gland openings on its top. Longitudinal folds and grooves at the junction of the proventriculus with the esophagus exhibited various sized and shaped openings of esophageal glands with irregular outlines. Histologically, the surface epithelium of the proventriculus was covered by a thin layer of cuticle, particularly evident at its junction with the gizzard. The lamina epithelialis and propria, and secretory units of proventricular lobules were infiltrated by aggregations of lymphocytes and lymphoid follicles (nodules). Variably shaped glandular lobules of proventricular glands occupied the submucosa, surrounded by thin strands of smooth muscle fibers derived from muscularis mucosa. Triangular, cuboidal, or columnar-shaped secretory oxyntico-peptic cells lined the secretory units. Many telocytes (pyramidal or fusiform-shaped cell bodies with lengthy telopodes) were observed in interstitial tissue. Further, two types of argyrophilic endocrine cells were identified within the glandular epithelium. The morphology of the M. gallopavo proventriculus reflects its dietary habits and behavior.

Emerging market differentiation for broiler meat from strains exhibiting a range of growth rates is necessitating comparative research on various physiological and production aspects of these strains. The objective of the present study was to compare select gastrointestinal, tibial, and plasma attributes in a sample of 48-day-old (50 male and 50 female) broilers obtained from fast-and slow-growing flocks maintained under similar feed and management regimens. Eight birds were randomly selected from a fast (B; representative of modern commercial strains) and each of the 4 slow-growing strains (SG; D, H, M, and E). The strains differed by estimated time to reach 2.2 kg bodyweight corresponding to 36, 50, 42, 44, and 50 D for B, D, H, M, and E, respectively. Blood samples were collected to determine plasma metabolites, and birds were subsequently euthanized, weighed, and necropsied for gizzard and small intestine weight, jejunal tissue for histomorphology, ceca digesta samples for concentration of short-chain fatty acids (SCFA) and left tibia for ash content. Gizzard was heavier (P < 0.01) for D, H, and M than that for B and E, whereas the small intestine was lighter (P < 0.01) for B, D, and H than for M and E. There were no (P > 0.05) strain differences on SCFA, jejunal villus height and crypt depth, plasma proteins, and electrolytes. Strains D, H, and M exhibited higher (P = 0.01) tibia ash concentration than B; E was intermediate and not different (P > 0.05) from any strain. Specifically, the tibia ash for B, D, H, SG 3, and E were 1.24, 1.44, 1.43, 1.49, and 1.39 g/kg BW, respectively. The B birds showed higher (P < 0.01) plasma concentrations of aspartate transaminase, creatine kinase, lactate dehydrogenase, and creatinine than SG strains. In conclusion, although B and some SG strains had lighter gastrointestinal tract indicative of energy efficiency, higher circulating plasma enzymes in B birds suggested impaired hepatic function. Moreover, lower tibia ash in B suggested disproportionate body mass relative to skeletal support.

Many studies have used grit (in the form of lead (Pb) pellets) presence in avian gizzards as an indicator of Pb shot exposure. However, due to nearly complete pellet absorption in gizzards or rapid passage of pellets, the absence of Pb shot presence in a gizzard does not confirm lack of Pb shot exposure. This study provides the basis for an additional technique to identify if elevated tissue Pb concentration is due to Pb shot exposure. Bioaccessibility of Pb and trace elements (Sb, As, and Sn) present in Pb shot were quantified to determine if any of these elements would be useful as a secondary marker of Pb shot exposure. An avian physiologically based extraction test (PBET) was used to determine pellet dissolution rate and bioaccessible concentrations of Pb, Sb, As, and Sn in a simulated gizzard environment. Of the three trace elements, only Sb concentrations (44-302 µg/mL) extracted into the gizzard solution were greater than environmental background levels (US soil average 0.48 µg/g); thus, no natural source likely provides this amount of Sb. Therefore, there is evidence that Sb can be extracted from Pb shot in bird gizzards at detectable concentrations (above natural background). While further studies are needed to delineate the mechanisms of absorption and distribution, this study lends credence to the hypothesis that Sb may be a useful marker of Pb shot exposure in biological tissues, particularly when Pb pellets are not present nor observed in avian tissues.

In this study, the effect of grinding or pelleting of rapeseed on the digestibility, apparent metabolisable energy (AMEN), growth performance and gizzard weight of broiler chickens was evaluated. In Exp. 1, four treatments were tested (240 broiler chickens, 20 replications, 3 birds per cage). Birds received either a basal diet or were fed with rapeseed of different sized particles (fine, medium and coarse ground, respectively). In Exp. 2, 10 treatments were assessed (360 chickens, 12 replications, 3 birds per cage), where five different diets (a basal diet and four diets with intact rapeseed, fine ground, medium ground or coarse ground rapeseed, respectively) were fed non-pelleted or pelleted. In Exp. 3, two treatments were compared (224 broiler chickens, 14 replications, 8 birds per floor pen): fine ground rapeseed (FG) and intact rapeseed (IS). Compared with medium and coarse ground rapeseed, fine grinding increased in Exp. 1 the AMEN of rapeseed and the precaecal digestibility (PD) of dry matter and ether extract (EE) (p < 0.05). In Exp. 2, the content of AMEN and the PD of EE and crude protein (CP) increased as the degree of grinding increased when diets were not pelleted (p < 0.01). In contrast, the significantly highest values for these parameters were measured after pelleting without effect of grinding, resulting in a significant interaction between pelleting and grinding (p < 0.001). In Exp. 3, performance of chickens was not affected by dietary treatments, but gizzard weight and the PD of CP were higher when IS were included in the diet (p < 0.05). The results suggested that fine grinding may be used to increase the feeding value of full-fat rapeseed for broiler chickens. Nevertheless, pelleting of diets with rapeseed seemed to be much more effective in the reduction of particle size than grinding.

This study was performed to investigate the hypothesis that supplementation of processed lignocellulose (PL) in the diets of broilers has a positive effect on growing performance, pH value of gizzard, hepatic enzyme activity, immunologic indicators, histomorphological character of small intestine, and cecal microflora populations. A total of 720 one-day-old Ross 308 broiler chicks were allotted to 4 treatment groups and fed maize-soybean meal based diets. The basal diet was supplemented with PL with an amount of 0 kg (control), 0.5 kg, 1 kg, and 2 kg per ton feed. Growing performance parameters, were determined weekly until 35 D of age. Blood samples for enzyme activities and immunoglobulins, jejunum and cecum samples for histomorphological characters for villus growth, and microbial population were collected from 12 broilers from each group. At 35 D of age, body weight of broilers supplemented with 1 kg of PL was found to be the highest with a value of 2305.0 g, when compared to the broilers supplemented with control, 0,5 and 2 kg of PL groups (2154.0, 2201.0, and 2141.7 g, respectively, P = 0.001). An increased activity of aspartate amino transferase (AST) was observed in the control and 1 kg PL supplementation groups (633.6 and 597.4 IU/L, respectively), whereas alkaline phosphatase (ALP) activity was the highest in the control group (5404 IU/L, P < 0.05). Broilers in the control group had the lowest level of IgY and IgA (122.2 and 25.8 mg/dL, respectively, P < 0.05). Villus height increased by 22.0%, 40.7%, and 34.8% in 0.5, 1, and 2 kg PL supplementation groups, respectively, when compared to the control (P < 0.001). The processed lignocellulose supplemented as 1 kg of PL decreased the average count of Staphylococcaceae, E. coli, and Enterobacteriaceae, whereas it increased the population of Lactobacillus spp. in the cecum (P < 0.05). These data indicate that the supplementation of processed lignocellulose had positive effects for performance via changes in hepatic enzyme activities, immunoglobulin levels, villus growth in jejunum, and microflora in cecum.

Migratory birds undergo impressive body remodelling over the course of an annual cycle. Prior to long-distance flights, red knots ( Calidris canutus islandica) reduce gizzard mass while increasing body mass and pectoral muscle mass. Although body mass and pectoral muscle mass are functionally linked via their joint effects on flight performance, gizzard and pectoral muscle mass are thought to be independently regulated. Current hypotheses for observed negative within-individual covariation between gizzard and pectoral muscle mass in free-living knots are based on a common factor (e.g. migration) simultaneously affecting both traits, and/or protein limitation forcing allocation decisions. We used diet manipulations to generate within-individual variation in gizzard mass and test for independence between gizzard and pectoral muscle mass within individuals outside the period of migration and under conditions of high protein availability. Contrary to our prediction, we observed a negative within-individual covariation between gizzard and pectoral muscle mass. We discuss this result as a potential outcome of an evolved mechanism underlying body remodelling associated with migration. Although our proposed mechanism requires empirical testing, this study echoes earlier calls for greater integration of studies of function and mechanism, and in particular, the need for more explicit consideration of the evolution of mechanisms underlying phenotypic design.

1. A 2 × 2 factorial design was used to test the hypothesis that impaired intestinal starch digestibility is attributable to rapid passage of digesta from the gizzard to the intestine, and that, compared to steam pelleting, increasing the availability of starch through extrusion cooking may alleviate the potential negative effect of rapid digesta flow on starch utilisation. 2. Thus, 7-d-old-broiler chickens were distributed to 48 cages and given a wheat-based (WB) pelleted diet containing either coarse oat hulls (OH-Pel) or fine cellulose (Cel-Pel) until d 19 to stimulate divergent development of the gizzard. Thereafter, both groups were further subdivided and challenged with a WB diet containing cellulose in either pelleted (Cel-Pel) or extruded (Cel-Ext) form on d 20 and 22. Either excreta or intestinal contents were collected at time intervals after feeding and analysed for marker and starch. 3. OH-Pel increased gizzard size and holding capacity. No excessively high starch levels (maximum 25 g/kg) were detected in the excreta. However, 8 h feed-deprived birds given Cel-Pel and challenged with Cel-Pel exhibited higher starch excretion and showed large individual variation during the first 135 min of collection. 4. Contrary to the OH-Pel group, more digesta and starch passed to the jejunum at 1 and 2 h and ileum at 2 and 3 h after feeding for birds given Cel-Pel, resulting in lower jejunal and ileal starch digestibility. 5. Increased starch gelatinisation through extrusion processing significantly improved starch digestibility regardless of gizzard function. However, at 1, 2 and 3 h after feeding, more digesta was retained in the foregut of birds given Cel-Ext. 6. The current data showed that starch degradation rate is associated with the flow of digesta which is linked to gizzard development, and that enzymatic hydrolysis of intact starch granules may be limited with more rapid feed passage through the gut.

A 21-day experiment was conducted to investigate the effects of wheat particle size, insoluble fibre source and whole wheat (WW) inclusion on the gizzard musculature, intestinal architecture and nutrient utilisation of broiler chickens. The following seven treatments, all in mash form, were tested: control diet using finely ground wheat (Fine); control diet using medium-ground wheat (Medium); control diet using coarsely ground wheat (Coarse); fine diet diluted with 10 g/kg lignocellulose (LC); fine diet diluted with 30 g/kg oat hulls (OH); fine diet diluted with 30 g/kg wood shavings (WS); and ground wheat in the fine diet replaced with 50 and 100 g/kg WW during the second (day 8-14) and third (day 15-21) weeks of the study respectively. Except for the LC diet, all treatments increased (p < 0.05) the thickness of the caudodorsal thick muscle of gizzard compared to the fine diet. The highest (p < 0.05) caudoventral thin and cranioventral thick muscle diameters in the gizzard walls were achieved with the OH and WS diets. Feeding OH, WS and WW diets improved (p < 0.05) starch digestibility compared with the fine diet, while medium, coarse and LC diets had no effect (p > 0.05). All diets containing fibre sources (LC, OH and WS) reduced (p < 0.05) the energy digestibility compared to the fine diet. Birds fed OH and WS diets gained the lowest (p < 0.05) weights. Feeding LC, OH, WS and WW diets increased (p < 0.05) the feed per gain compared with the fine diet. The current results suggest that there is a potential for coarse particles, insoluble fibre sources and WW feeding to improve the gizzard musculature and digestibility of some nutrients, with the effect being more pronounced with the inclusion of structural fibre sources.

1. The current study was conducted to evaluate the influence of high phytase doses and xylanase, individually and in combination, on performance, blood inositol and real-time gastric pH in broilers fed wheat-based diets. 2. In a 42-d experiment, a total of 576 male Ross 308 broiler chicks were allocated to 4 dietary treatments. Treatments consisted of a 2 × 2 factorial arrangement, with 500 or 2500 FTU/kg phytase and 0 or 16 000 BXU/kg xylanase, fed in two phases (starter 0-21; grower 21-42 d). Heidelberg pH capsules were administered to 8 birds from each treatment group, pre- and post-diet phase change, with readings captured over a 5.5-h period. 3. At 21 and 42 d, birds fed 500 FTU/kg phytase without xylanase had on average 127 and 223 g lower weight gain than all other treatments, respectively (P < 0.05). At 21 d, feed conversion ratio (FCR) was reduced (P < 0.01) by 2500 FTU/kg phytase or xylanase; however, 42-d FCR was unaffected by enzyme treatment. Inositol content of plasma was twice that of the erythrocyte (P < 0.001), with 2500 FTU/kg phytase tending to increase (P = 0.07) inositol content in both blood fractions. 4. Across all treatments, capsule readings ranged from pH 0.54 to 4.84 in the gizzard of broilers. Addition of 2500 FTU/kg phytase to the grower diet reduced (P < 0.05) average gizzard pH from 2.89 to 1.69, whilst feeding xylanase increased (P < 0.001) gizzard pH from 2.04 to 2.40. In contrast, digital probe measurements showed no effect of xylanase on gizzard pH, while addition of 2500 FTU/kg phytase increased (P = 0.05) pH compared to 500 FTU/kg phytase with or without xylanase. 5. These findings suggested that xylanase and high phytase doses have opposite effects on real-time gastric pH, while similarly improving performance of broilers.

The digestive system of a chicken is simple, short, and extremely efficient. In the upper gastro-intestinal tract (GIT) or foregut, in particular when feed is not continuously available, moistening of feed occurs in the crop followed by chemical and physical digestion in the proventriculus and gizzard, respectively, as a preparation for nutrient absorption which occurs in the distal portions of the GIT-duodenum, jejunum, ileum, and to a lower extent in the ceca and colon. Broiler husbandry practices in the past have focused on achieving high intakes of readily digestible nutrients and largely failed to consider the ancestral purpose of the foregut. Besides holding important digestive functions, the rich bacterial communities in both the crop and the gizzard transform these organs in barriers preventing the invasion of the GIT by pathogens. However, the amount of time feed spends in the foregut-and therefore the environment in this gut segment-is extremely variable and can be manipulated by different feeding practices, such as feed structure and composition, frequency of feeding, and/or light regimes.With further progress in terms of performance and health of broiler chickens being sought, and following decades of research focusing on distal GIT segments, it is about time to explore how the foregut can contribute to achieve these goals. This review revisits morphological, physiological, and microbiological characteristics of the foregut; explores the importance of this GIT portion as feed intake regulator; and discusses how husbandry and feeding practices such as lighting regimes and feed structure may be adapted to activate the crop and the gizzard, which results in performance and health improvements. Finally, interactions of these feeding practices with exogenous enzymes are discussed and suggestions for further research are made.

We analyzed the gizzards, and grits retained in the gizzards of 41 cranes that migrated to the Izumi Plain during the winter of 2015/2016 and died there, either due to accident or disease. These included 31 Hooded Cranes (Grus monacha) and 10 White-naped Cranes (G. vipio). We determined body weight, gizzard weight, total grit weight and number per gizzard, and size, shape, and surface roundness of the grits. Average gizzard weights were 92.4 g for Hooded Cranes and 97.1 g for White-naped Cranes, and gizzard weight positively correlated with body weight in both species. Average total grit weights per gizzard were 19.7 g in Hooded Cranes and 25.7 g in White-naped Cranes, and were significantly higher in the latter. Average percentages of body weight to grit weight were 0.8% in Hooded Cranes and 0.5% in White-naped Cranes. Average grit number per gizzard was 693.5 in Hooded Cranes and 924.2 in White-naped Cranes, and were significantly higher in the latter. The average grit size was 2.8 mm in both species. No differences were found in the shape and surface roundness of grits between the two species. To the best of our knowledge, this is the first study on the grits retained in the gizzards of Hooded and White-naped Cranes.

The purpose of this study was to ascertain the composition and origin of certain gastroliths or gizzard stones from broiler breeders (Gallus gallus domesticus). Fourier transform infrared spectroscopy (FTIR) and X-ray powder diffraction techniques were used as analysis tools. The main components resulted to be organic fibre and minerals referred to a pegmatite rock (quartz, feldspar albite and haematite) used as grit. Although the generally accepted purpose of gastroliths in chicken is the crushing and grinding of foodstuff in the ventriculus, the importance of mineral uptake from grit of iron and other essential elements such as Al, Ca, K, Cl, P, Ti, Mn, Mg, Cu, Zn and Zr (in ppm) as a secondary effect of the abrasion and dissolution of gastroliths should not be disregarded.

This study investigates the developmental morphology changes on the proventriculus and gizzard of African ostrich chicks using gross anatomy, and light and transmission electronic microscopy. The body weight; the weight of the proventriculus and gizzard; the thickness of simple tubular glands, muscularis mucosae, compound tubular glands, and muscular layer of the proventriculus; and the thickness of the gizzard glands and muscularis mucosae were measured on postnatal d one, 45, 90, and 334. Under transmission electronic microscopy, the oxynticopeptic cells, mucous cells, and endocrine cells were observed in the proventriculus on postnatal d one, 45, and 90. Our results revealed that the weights of the proventriculus and gizzard (relative to the body weight) both peaked on d 90, respectively, and declined thereafter. The thicknesses of the simple tubular glands, muscularis mucosae, compound tubular glands, muscular layer of the proventriculus, and gizzard glands increased with increasing bird age. However, the thickness of the muscularis mucosae in the gizzard peaked on d 90 and gradually decreased thereafter. The result of transmission electron microscopy revealed that the glands in the submucosa layer of the proventriculus did not differ from other cell types, aside from an increase in cell diameter and an increase in cytoplasmic content. A significant increase in the number of mitochondria and smooth endoplasmic reticulum was noted, as well as an in granules secreted by endocrine cells. Therefore, to improve brood rates of reared African ostrich chicks, feed management ought to be enhanced between postnatal d one and day 90.

Housing and feeding practices of wild birds for conservation management of biodiversity or restocking play a crucial role in determining the survival rates of animals when released into nature. Failure in coping with the environment might be one of the main flaws captive animals can experience when put into natural habitat. The present investigation aimed at exploring feeding habits and related morphometric traits of gizzard with respective content from wild partridges in comparison with captive ones. A total of 52 hunted wild Sardinian adult partridges (Alectoris barbara barbara Bonnaterre, 1790) were used. By comparison, 42 captive adult partridges reared in cages were enrolled. From each animal, the morphology of gizzard was investigated and respective content analysed for gross composition and taxonomical determination of fractions. Wet sieving analysis of each gizzard content was carried out (four-sieve towers with different mesh sizes: 1 mm, 500 µm, 250 µm and 125 µm), and relative and absolute weight of fresh filled and empty gizzards were recorded. Thickness of muscular layer of gizzard wall was measured by stereomicroscope. Carcass weight significantly (p < 0.05) differed between captive vs. wild partridges (478 ± 21 and 305 ± 35 g respectively). Post-mortem inspection highlighted gross morphological differences of gizzards between the two groups. Fresh weight of empty gizzards was 6.37 ± 0.80 vs. 11.25 ± 1.82 g, with average pH values of digesta 4.97 ± 0.11 vs. 4.38 ± 0.28 in captive vs. wild partridges respectively. Gizzard content from wild partridges accounted a 61.7% vs. 38.3% of biological vs. non-biological material proportions (DM basis). The non-biological material was mostly represented by lithic fragments and minerals (quartz, feldspar, calcite and mica) with specific peculiarities in terms of granulometry and morphometry. Feeding the captive partridges should point to support morphological and functional adaptation of gizzards to the feeding stuffs naturally available in the environment.

Digestive capacity often limits food intake rate in animals. Many species can flexibly adjust digestive organ mass, enabling them to increase intake rate in times of increased energy requirement and/or scarcity of high-quality prey. However, some prey species are defended by secondary compounds, thereby forcing a toxin limitation on the forager's intake rate, a constraint that potentially cannot be alleviated by enlarging digestive capacity. Hence, physiological flexibility may have a differential effect on intake of different prey types, and consequently on dietary preferences. We tested this effect in red knots (Calidris canutus canutus), medium-sized migratory shorebirds that feed on hard-shelled, usually mollusc, prey. Because they ingest their prey whole and crush the shell in their gizzard, the intake rate of red knots is generally constrained by digestive capacity. However, one of their main prey, the bivalve Loripes lucinalis, imposes a toxin constraint due to its symbiosis with sulphide-oxidizing bacteria. We manipulated gizzard sizes of red knots through prolonged exposure to hard-shelled or soft foods. We then measured maximum intake rates of toxic Loripes versus a non-toxic bivalve, Dosinia isocardia. We found that intake of Dosinia exponentially increased with gizzard mass, confirming earlier results with non-toxic prey, whereas intake of Loripes was independent of gizzard mass. Using linear programming, we show that this leads to markedly different expected diet preferences in red knots that try to maximize energy intake rate with a small versus a large gizzard. Intra- and inter-individual variation in digestive capacity is found in many animal species. Hence, the here proposed functional link with individual differences in foraging decisions may be general. We emphasize the potential relevance of individual variation in physiology when studying trophic interactions.

Two 49 d floor pen studies were conducted to evaluate the effects of litter type and dietary coarse ground corn (CC) inclusion on broiler live performance, gastrointestinal tract (GIT) development, and litter characteristics. Experiment 1 was a 2×2 factorial arrangement of 2 genders (male or female) and 2 CC levels (0 or 50%). From 15 to 35 d, the addition of CC decreased feed intake (P<0.01) and BW gain (P<0.05) of males but not females. The inclusion of CC decreased feed intake (P<0.01) and BW gain (P<0.01) from 0 to 49 d but improved adjusted feed conversion ratio (AdjFCR) from 35 to 49 d (P<0.05). Male broilers exhibited better live performance than females during the study as evidenced by greater feed intake (P<0.01) and BW gain (P<0.01), and improved FCR (P<0.01), but with increased mortality (P<0.05). The inclusion of CC increased relative gizzard weight (P<0.01) and decreased relative proventriculus weight (P<0.01) at 49 d. Experiment 2 was a 2×2 factorial arrangement of 2 CC levels (0 or 50%) and 2 litter types (ground old litter or new wood shavings litter). The inclusion of CC decreased feed intake throughout the experiment without affecting final BW when only males were used and improved FCR after 25 d (P<0.01). New litter improved FCR from 1 to 14 d (P<0.01). At 49 d, the birds fed the CC diet had reduced excreta nitrogen (P<0.05) and litter moisture (P<0.05). In conclusion, 50% CC inclusion initially produced negative effects on live performance that became positive as BW increased. The effects of CC became evident at an earlier age for males. New litter had only a marginal benefit on broiler live performance.

1. A total of 2200 White Leghorn layers were used to study the effect of feeding coarse maize on productive performance, gizzard weight, apparent metabolisable energy (AME) and egg quality parameters. 2. The experiment was a completely randomised design with 5 treatments, each being replicated 5 times (88 birds per replicate). Dietary treatments included a control diet with 600 g/kg of ground maize (6 mm sieve) and experimental diets with 150, 300, 450 or 600 g/kg coarse maize (10 mm sieve) replacing (w/w) ground maize. Diets, in mash form, were offered from 39 to 62 weeks of age. 3. Over the entire experimental period, dietary treatments had no effect on any of the production parameters, except on feed intake. A quadratic effect was observed for feed intake, where intake increased at 150 g/kg coarse maize inclusion. At higher inclusion levels of coarse maize, feed intake was similar to that of the control diet. But the differences in daily intake between dietary treatments were only around 1 g/bird and may not be of any biological significance. 4. Dietary treatments had no effect on gizzard weight, AME or egg quality. 5. The results indicate that coarse maize could completely replace maize in layer diets with no adverse effect on egg production, egg quality and dietary energy utilisation. In the current work, although the proportion of coarse particles (over 1 mm) increased with increasing inclusion levels of coarse maize, the differences in the percentage of particles above 1 mm between the fine control (0 g/kg coarse maize) and coarsest (600 g/kg coarse maize) diets was only 15%, and this may limit the value of the findings reported herein.

We carried out an observational and experimental study to decipher how resource characteristics, in interaction with the predator's phenotype, constrain a fitness-determining performance measure, i.e. refuelling in a migrant bird. Two subspecies of red knot (Calidris canutus rogersi and C. c. piersmai) use northern Bohai Bay, Yellow Sea, China, for the final prebreeding stopover, during their 10,000-15,000 km long migrations between wintering and breeding areas. Here, they feed on small bivalves, especially 2-7 mm long Potamocorbula laevis. With an average stay of 29 days, and the need to store 80 g of fat for the onward flights to high-Arctic breeding grounds, red knots need to refuel fast. Using existing knowledge, we expected them to achieve this on the basis of (1) prey with high flesh to shell mass ratios, (2) large gizzards to crush the ingested molluscs, or (3) a combination of the two. Rejecting all three predictions, we found that red knots staging in Bohai Bay had the smallest gizzards on record (4.9 ± 0.8 g, mean ± s.e.m., N = 27), and also found that prey quality of P. laevis is much lower than predicted for the measured gizzard size (i.e. 1.3 rather than the predicted 4.5 kJ g(-1) dry shell mass, DM(shell)). The estimated handling time of P. laevis (0.2 s) is much shorter than the observed time between two prey ingestions (0.7 s), indicating that prey handling time is no constraint. Based on field observations of dropping rates and on indoor digestion trails, the shell processing rate was estimated at 3.9 mg DM(shell) s(-1), i.e. three times higher the rate previously predicted for red knots eating as fast as they can with the measured gizzard size. This is explained by the small and easily crushed P. laevis enabling high processing rates. As P. laevis also occurred in high densities, the metabolizable energy intake rate of red knots with small gizzards at 5 J s(-1) was as high as at northward staging sites elsewhere in the world. Currently, therefore, food characteristics in Bohai Bay are such that red knots can refuel fast whilst economizing on the size of their gizzard. These time-stressed migrants thus provide an elegant example of symmorphosis.

Two experiments were conducted from 0 to 21 d of age and evaluated diets containing combinations of fine or coarse ground corn (557 or 1,387 µm, respectively), whole sorghum, 15% corn distillers dried grains with solubles (DDGS), or a prebiotic-type product containing yeast cell wall, lactose, citric acid, and other fermentable carbohydrates. In experiment 1, feed efficiency was decreased (P < 0.001) after the first week of age for broilers fed diets containing whole sorghum, whereas broilers receiving diets with 15% DDGS had increased feed efficiency (P < 0.03) compared with those receiving no DDGS. In the second experiment, BW gain was increased (P < 0.03) after the first week of age for broilers fed diets containing the prebiotic and DDGS compared with their respective controls. In experiment 1, the diet containing sorghum yielded the highest AMEn value (P < 0.03). In experiment 2, diets containing the combination of the prebiotic + DDGS yielded higher AMEn values (P < 0.004) at 7 and 21 d compared with diets containing no combination. The effects of diet on amino acid digestibility were generally small and inconsistent in both experiments. In experiment 1, broilers fed the coarse corn or whole sorghum diets had increased (P < 0.0001) relative gizzard weights compared with broilers fed the fine corn diet. Also, diets containing DDGS yielded increased relative gizzard weights (P < 0.05) compared with diets containing no DDGS. In experiment 2, there was a decrease (P < 0.03) in cecal Escherichia coli when the combination of the coarse ground corn, prebiotic, and DDGS was fed in comparison with broilers receiving no prebiotic or DDGS. These results indicate that diets containing coarsely ground corn or whole sorghum in combination with DDGS can be fed to broilers with no long-term adverse effects on growth performance and nutrient digestibility and that these ingredients can have beneficial effects on AMEn, gizzard size, and cecal microflora in some instances.

We report the results of spatiotemporal mapping of the spontaneous actions of component muscles of the gizzard and associated structures in ex vivo preparations with combined superfusion and vascular perfusion. Ongoing spontaneous contraction of cranial and caudal thin muscles occurred at a frequency of 2.2 ± 0.1 cycles per minute. Contractions of M. tenuis craniodorsalis with mean duration of 2.8 ± 0.2 s commenced ventrally adjacent to the distal limit of the proventriculus and progressed dorsally at 2.02 ± 0.03 mm•s(-1) in a concerted front. Near simultaneous contraction of M. tenuis caudoventralis of mean duration of contraction of 4.7 ± 0.7 s commenced dorsally and progressed ventrally at a similar rate (2.1 ± 0.1 mm•s(-1)) and in a similar manner. Contraction of the caudoventralis preceded that of craniodorsalis (mean 1.1 ± 0.15 s). Contraction of the 2 tenuis muscles was synchronous with the first component peak of the cyclic increase in lumen pressure and with distension of the crassus musculature. Contraction of the M. crassus caudodorsalis muscle coincided with the second component peak and was followed by distension of the tenuis musculature. The latter commenced before the relaxation of the tenuis muscles. Contractions of the crassus muscle propagated rapidly at right angles to the orientation of the muscle fibers at a faster velocity than that of the tenuis musculature. The durations of the component peaks in lumen pressure indicated that the duration of crassus contraction was similar to that of the tenuis musculature.
